I would like to use an EText found on the Gutenberg project page. My
question is whether the license header could be removed  when
displaying such text on your site?

it not only _could_ be removed, it _should_ be removed.

because project gutenberg doesn't want to incur liability
for any possible reason that could result from your site...

you will find this actually mentioned in the legalese itself.
