If I would follow your way of arguing things lets all just take one of the most widely used formats on the planet docx! Just for the sake of argument. But EPUB *is* a master format, just not one apparently you like, and when I suggest a real tool (Sigil) which has a real and large user base of real people making real books you counterpropose something which doesn't exist.
