Within plain ascii, you could treat it as an intended block quote. (This may or may not be practical, depending on the nature and length of the text). Alternately, you could make an html version as well, and include a short note in the ascii version that the HTML retains more of the typographical detail of the original. The book I'm working on scanning in is a posthumous collection of the works of a scientist. The editors have, at certain points, put the actual text of the notes in a different typeface. Any thoughts on how one can indicate this in a plain ASCII format?
